Rockabilly Night at Jelly’s (Home-made Burgers)

Ingredients:

  • A playlist of Rockabilly classics (for cheesy upbeat rockabilly try The Baseballs)
  • Vanilla IceCream + Ice + Milk (for Milkshakes)
  • For Home-made Burgers:
    • Really good quality beef mince 400g + 100g lamb Mince
    • 1 Onion
    • 1 Egg
    • Coriander
    • 2 Cloves of Garlic
    • 2 Spoons of Worcester Sauce
    • Oxo Beef Cube
    • Salt  + Pepper
    • Cheddar
    • Burger Buns
  • For the Chips:
    • Maris Piper Potatoes
  • Salad to serve
  • Coleslaw
  • Ketchup
  • Optional: Gherkins

Methodology

Peel or don’t peel the potatoes depending on whether you are going with/without skins effect – parboil them for a few minutes and then leve on the side, to let the steam/water drain off so that they are dry to roast.  Sprinkle with oil, pepper and salt.  Make sure the potatoes are covered in oil – no dry bits.  Its the oil that makes them go nice and brown quickly. Stick that into the oven.

Chop the onion and the garlic, and shallow fry until translucent.

Mix all mince in a bowl together, douse with worcester sauce, season with salt and pepper, break up the oxo cube and season with that aswell.  Mix in chopped coriander and  the cooked onions.   Lightly whisk the egg and add to the mince mix – you probably wont need the whole egg, just half: add small amounts at a time, until the whole mixture sticks nicely together.  Make patties, this mix should make 4.

Fry the burgers until cooked all the way through,  put cheese on top, and finish in the oven for 2 mins to melt the cheese.    Warm the buns as you do this last bit.
